Moms Picnic Potato Salad


Comment – This recipe is a family favorite. Sprinkle some paprika over the top for good presentation.

6 med. red potatoes – cut up
3 hard boiled eggs
1 small onion, finely chopped
3 stalks celery – chopped
3/4 cup pickles chopped
1-1/4 cup mayonnaise
1/4 cup ketchup
3 Tbsp mustard

Boil potatoes 20 minutes. Cool and cut into 1-inch cubes. Lightly salt as you add potatoes into a mixing bowl. Add remaining ingredients, stir well. Chill in fridge 1 hour. Serves 10-12
